A tasty way of using up overripe bananas ...
Dry Ingredients:
210g Plain flour
110g Sugar
½ tspn Bicarbonate of soda
¼ tspn Baking powder
¼ tspn Salt
3 Cadbury's Fudge bars, chopped into pieces.
Wet Ingredients:
1 Egg
30g Butter, melted
2 tbspns Milk
2 Large Overripe bananas, mashed.
Makes 12.
Set oven to 200c/ 400f/ gas mark 6
Step 1:
Add all dry ingredients in one bowl, combine together. Stir through chopped up fudge pieces, keeping a little back to top the muffins before baking.
Step 2:
Lightly whisk the egg together with the milk and melted butter. Mash the banana to a pulp and combine with the egg, milk and butter. Mix together.
Step 3:
Make a small well in the middle of the bowl of dry ingredients, pour in the wet ingredients and mix together well.
Step 4:
Spoon resulting gloop into a 12 hole muffin tin, sprinkle a few remaining fudge pieces onto each muffin.
Step 5:
Put in the centre of the oven for about 20 mins or until firm and springy to the touch.
Step 6:
Enjoy!
