A simple muffin with a sensational taste ...
Chocolate Orange Muffins
Dry Ingredients:
250g Self raising flour
175g Caster sugar
2 tsp Baking powder
3 tbsp Cocoa powder
100 g Chocolate Chips
Wet Ingredients:
1 Large egg
250ml Milk
90ml Vegetable oil
2 tsp Orange essence
Set oven to 200c/ 400f/ gas mark 6.
Step 1:
Mix all the dry ingredients together in a bowl and combine them together
Step 2:
Whisk the egg and add the milk, oil and orange essence. Mix together.
Step 3:
Make a small well in the middle of the dry ingredients, add the wet ingredients. Stir together well.
Yes, the resulting mess is sloppy, lumpy, and looks like something you might pebble dash the house with. DON'T PANIC.
Step 4:
Fill a 12 hole muffin pan with muffin cases and .... this is the most difficult part of the muffin-making..... spoon the resulting gloop into the cases while being careful not to splatter the walls, ceiling and floor.
Step 5:
Put in the centre of the oven for 20 minutes until nicely springy to the touch. Remove and ... the second most difficult part... leave to cool before eating.
You can, if you have the patience, melt a little chocolate to pour over the top and sprinkle with icing sugar before eating but it's not strictly necessary.
Step 6:
Eat.
